9-point tuna and crackers lunch

triscuits have always been my go-to cracker, so i'm very happy they don't cost too many points. i also love love love tuna salad sandwiches. but now that i'm trying not to eat too much bread, i'm dressing up my tuna salad in different ways.

the canned fruit is packed with juice and light syrup, which i drained off, but i still added a point for the syrup, just in case.

 2.5 oz. pouch of light tuna in water (2 pts) mixed with 1.5 tspn mayo (1 pt), sweet pickle relish and chopped pepperoncini
 4 triscuit crackers (2 pts) topped with sweet-hot mustard and chopped sweet orange pepper
  sliced cherry tomatoes and cucumber
 1/4 sliced avocado (2 pts) with sweet paprika
 6 black olives (1 pt)
 4 oz. canned tropical fruit (1 pt)

i love organic fruits and veggies - i'm just convinced they taste better, plus the distinct lack of pesticides is a good thing. someday i hope the powers-that-be can make it cheaper for farmers to be certified organic so the prices will come down.

i like to buy the single serving pouches of tuna (instead of cans) whenever they're on sale. so much easier than having to drain the cans, no need for a can opener, and just the perfect amount of tuna for one salad.

 tuna - mix with 1 tbsp mayo, 1 tspn sweet pickle relish, chopped red onion and pepperoncini

 spring greens, cilantro, cherry tomatoes, cucumber, steamed asparagus, sweet red pepper, shredded tri-color carrots

 pomegranate vinaigrette dressing
